Vegan Key Lime Mousse
There has never been an easier and more pleasing summer dessert! I love the silky smooth texture, and it really does taste like key lime! Appropriately I first had something like this at a yoga retreat in Mexico, where avocados and limes abound! It was love at first bite. I went straight home and worked out my own variation of it. Just to be clear, I never make a single serving — it's so good, you just have to share. However, I wrote the recipe in terms of 1 serving, because its an easy one to make for any size group — just multiply by the number of folks joining you. At the store, remember you want about an avocado and lime for each desired serving. This is an amazing hit at picnics and summer dinner parties, bonus its also raw and gluten and soy free to accommodate all of your party guests. Because lime is a natural preservative for the avocado, this will hold up in the fridge for a couple of days. if you do end up storing some for later, I find the best way to help it keep is to lay saran wrap on the surface of the mousse before placing it in the fridge to reduce the contact to air (which leads to browning) 1 serving 1 avocado juice of 1 lime 2 tbs agave syrup garnish with unsweetened shredded coconut (optional) Half the avocado, remove the pit, and scoop out the flesh taking care to avoid any brown spots. Blend all ingredients together in a food processor or with an immersion blender. Blend until smooth. Sprinkle coconut shreds to serve.
