Watermelon Gazpacho

Aug 3rd is National Watermelon Day. What does that mean? I don’t know. Who invented it? Even the internet doesn’t seem to know. Why should we care? Watermelon Gazpacho is about the most refreshing lunch ever for a hot day. You can make this in a small or larger batch for a big group. Serve up with some avocado toast for a little crunch!
Ingredients: 1 small watermelon, cubed and seeded 5 medium tomatoes 2 shallots 1 jalepeno (remove seeds for milder flavor, leave seeds in if you like spicy!) handful of cilantro 2 tsp ground cumin 2 tsp ground coriander Loosely chop the produce, place all ingredients into a blender, and blend until smooth. This is a very forgiving recipe, you don’t have to be very exact with amounts and you can taste and adjust along the way!
