Wrap Yourself In Veggies!
A wrap is a great way to get in your serving of veggies, and it’s conveniently transportable to work, school or even a lunch date with a friend in the park. This is a great recipe to make with your kids on a Sunday night, and you’ll be set on Monday morning. Though this veggie wrap calls for some cumbersome ingredients, don’t be afraid, they can all be purchased at your local health food store or deli. Make them in advance and you’ll always have a “on the go” meal ready!
Ingredients:
1 half red bell pepper
4 cherry tomatoes
3 tablespoons of taboule
3 tablespoons of roasted red pepper hummus
1 wrap or tortilla
½ cup of spinach
Pinch of red pepper blacks
Salt and pepper to taste
Process:
Halve one pepper and slice into thin strips. Halve your cherry tomatoes.
Start off by warming up your tortilla or sprouted wrap over a low flame to make it more pliable- I used this brand http://www.wholefoodsmarket.com/products/engine-2®-plant-strong®-sprouted-ancient-grains-tortillas
Once warmed up, spread your desired flavor of hummus onto your wrap.
Lay the spinach leaves onto one side of your wrap and proceed to add your tomatoes, peppers and pre made (or homemade if you desire) tabouli- I used this brand http://www.abrahamsnatural.com
Season with salt, pepper and red pepper flakes.
Roll up your wrap as if you were rolling a burrito and you’re ready to go! Your lunch, dinner or snack is prepared in no time!
